Changing Quotation Statuses
You can change Quotation Statuses in Configuration > Advanced Settings > Lookup Codes > *The entity to choose is "Quote Status" *:

Fig 2. "System use" can be set to closed to move quotes of that status into "Closed Quotes"
Fig 3. Accepted Quotes now appear in Closed Quotes
Making Quotes not able to be edited
There is also the option to stop quotes being edited, which can be set per status, as shown in Fig 2.
